I started out the day by thinking I was going to plan our meals for the next 4 weeks but then I realized there will be some nights I will not feel like cooking or something may come up so I changed this to a 2 week meal plan.
Check out this blog for tips on organizing, she also hosts a Menu Plan Monday where you can go check out other blogs and take a peak at other people's menus.

The following meals are not complex, my main goal is to use up what I already have and to have minimal trips to the grocery store. I also have 4 children one of which is 8 weeks old so I need to be in and out of the kitchen.
I get most of my recipes from here, people do great reviews and offer suggestions which are great for modifying the recipe.
